This recipe is my version of quite possibly the greatest food combination ever;
lobster, pasta and cheese.   I don't recommend you eat this every week but if
it's your birthday?....go for it!

Three Cheese Lobster Macaroni

  1              pound  gemili pasta -- cooked al dente
  8        tablespoons  unsalted butter
  6             ounces  goat cheese
  6             ounces  asiago Cheese -- shredded
  12            ounces  Parmesan cheese -- grated
  2        Tablespoons  unsalted butter -- melted
  1/8           cup  extra virgin olive oil
  2               cups  panko
  1                cup  heavy cream
  12            ounces  cooked lobster claw meat
                        kosher salt and freshly cracked black pepper -- to taste
 
Melt 8 tablespoons butter over medium heat in large pot.  When butter starts to
bubble add lobster meat and sauté for 2 minutes.
 
Add goat, asiago, and parmesan cheeses and cooked pasta and toss to combine
taking care not to bread up the lobster meat too much.
 
In a small bowl mix the 2 Tablespoons melted butter, 1/8 cup olive oil and
panko.
 
To the lobster and pasta mixture add heavy cream and half of the moistened
panko.  Stir mixture until all cheeses are blended and slightly thickened.
Salt and pepper to taste and pour mixture into an oven-safe dish.  Sprinkle
top with remaining panko.  Put into a 450 degree oven for 15 minutes until top
is brown and mixture is bubbling.
