Orzo with Roasted Vegetables

Amount Measure Ingredient -- Preparation Method

1 small eggplant -- peeled and diced (3/4")
1 red bell pepper -- peeled and diced (1")
1 yellow bell pepper -- peeled and diced (1")
1 red onion -- peeled and diced (1")
2 cloves garlic -- minced
1/3 cup Olive oil (Good Quality)
1 1/2 teaspoons kosher salt
1/2 teaspoon fresh ground pepper
1/2 pound Orzo -- cooked and drained
Dressing:
1/3 cup lemon juice (2 lemons) -- freshly squeezed
1/3 cup Olive Oil (Good Quality)
1 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
To Assemble:
4 scallions (white & green parts) -- minced
1/4 cup pine nuts -- toasted
1/4 pound feta cheese (not crumbled) -- diced (1/2")
15 fresh basil leaves ( -- chiffonade)

Toss the eggplant, peppers, onion and garlic with the olive oil, salt, and pepper on a large roasting sheet. Roast for 40 minutes, turning once with a spatula.

Meanwhile, cook the orzo.
Drain & transfer to a large serving bowl.

Add the roasted vegetables to the pasta, scraping all the liquid and seasoning from the roasting pan into the bowl.

For the dressing, combine all ingredients and pour on the pasta and vegetables.
Let cool to room temperature, then add the scallions, pine nuts, feta and basil.

NOTES : Easily adapts to large quantities.
Add the dressing when the orzo is still warm so it is absorbed into the pasta
Easy to make in advance! Add the pine nuts, feta & basil at the last minute. Leftovers are great the next day!


Zucchini Pancakes

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 Cups zucchini -- Grated
1 Tablespoon onion -- grated
1/2 cup bisquick® baking mix
1/4 cup parmesan cheese -- grated
2 each eggs -- beaten
oil -- for frying

Mix above ingredients together until blended.
Fry in oil or melted butter until browned on both sides.
