Recipes of the Month

The following are two very special recipes that are client favorites, as well as being very special to two very important people in Joe's life:


(In memory of Joe's dear sister, this was her favorite birthday meal)

“Susie’s Shrimp Scampi”

2 Tbl Oil
2 Lbs Shrimp, peeled and deviened
3 Tbl Butter
4 cloves garlic, chopped fine or pushed through garlic press
2 Tbl lemon Juice
2 Tbl fresh chopped Parsley
Salt and Pepper to taste

Heat skillet over high heat, add oil and coat the bottom of the pan. Add shrimp and cook, stirring frequently until shrimp turns opaque.
Reduce heat to medium, add garlic and cook an additional 30 seconds. Add lemon juice, toss shrimp, and reduce heat to low. Over low heat, stir pan while adding butter and allow sauce to coat shrimp. Add salt and pepper to taste and serve over angel hair pasta.

“T.J.’s Baked Ginger Salmon”

1 Tsp Ginger chopped fine
1 Tsp Garlic Powder
1/3 Cup Soy sauce
1/3 Cup Orange juice
¼ Cup Honey
1 ½ lbs Salmon Filed

In bowl, mix the first five items. Place Salmon filets in casserole dish, and pour sauce over top. Bake at 350 degrees for 20-25 minutes. Baste salmon with sauce frequently; it will form a delicious glaze as it bakes!! Serve with boiled red potatoes or rice and your favorite vegetable
