Start out the day with perhaps THE most seasoned chef in our industry.  Chef Ina has been twirling her spoons and spatulas in her clients' kitchens for well over a decade now and will be dishing out some of her secrets to you.  She will share tips on how to pair foods, discussing essential keys for recipe development, and presenting ways to enhance recipes to add a ~gourmet~ touch.

Presentation by Maurita Plouff

Like it or not, taxes are a fact of business life. Mapping out a plan for tax preparation will make this business task a bit less burdensome. Chef Maurita learned formal corporate accounting as part of her graduate work in management, and put those skills to work managing a capital-intensive business unit at a Fortune 50 company. Most importantly, she has more than 10 years experience in filing her own taxes as a sole proprietor, and can pass on some tips to make your life easier at filing time.

2:45 – 3:45   From Personal Chef to Commercial Kitchen & HMR

Presentation by Chefs  Debra Lane and Norie Berndt

These adventurous ladies have taken their businesses to new territories.  Starting out as Personal Chefs, they have grown into HMR (Home Meal Replacement) services and operate from commercial kitchens.  This is a world unto itself, but Chefs Debra and Norie have charted a new course.

8:30 – 11:30  MORNING CHEF DEMONSTRATIONS  

You’re in for a real treat Saturday morning!  Journey through an array of stations manned by personal chefs who are experts on each topic.  Some will be demo only, while others will offer you a “hands on” experience!  Although informative, these sessions will be fast-paced.  As you arrive, you’ll be directed to your “first course” demo.  At designated times, you’ll rotate to the next “course.”  Once all the rotations are completed, you’ll have a plate full of new tips and tools for your cheffing bag!  Pack your knife (but not in your carry on!) and cut up with us in Portland .  Following are the numbered demo stations.

PROFESSIONAL PHOTOGRAPHS

Everyone needs a professional photograph for press releases, press kits and web pages. This year, for the first time, you will be able to add this to your portfolio at the Personal Chefs Network Convention. Arrangements have been made with professional photographer Linnea Osterberg to schedule sittings on Saturday afternoon, October 2, from Noon to 4PM. The sitting will be brief and allow you ample time to visit exhibitor booths as well. Please contact Linnea directly to schedule your sitting or for additional information.
